Chicken Udon Soup

Another Asian-inspired dish, this is healthy comfort food and great for your diet and soul!  One portion will come in around 650 calories, though the miso can be a little high in sodium so bear this in mind if you have heart problems and search out a low-salt alternative such as this

This is a very easy dish to prep and can be cooked in one large flat-bottomed frying pan, minimising washing-up duties!

Measures below will serve two.


Ingredients:

2x Chicken Breast
2x Spring Onion
100g Chestnut Mushrooms 
100g Green Beans
Miso Paste
Yutaka Dried Miso Soup (Morrisons World Food Section)

Sesame Oil
Toasted Sesame Seeds
Chilli Flakes
Cornish Sea Salt
Pepper
Fish Sauce
Light Soy Sauce
Granulated Garlic


Step 1: Prep

Finely chop spring onion, slice the mushrooms around 1/4" thick and the green beans to about 1/2" thick.




Toast the sesame seeds in small, dry frying pan and put them to one side.  Get the pan hot first, the seeds will take around 30 seconds to achieve a dark-gold hue. 

Season the chicken breasts with Sea Salt, Pepper and Granulated Garlic


Step 2: The Chicken

Melt a knob of butter in a large, flat-bottomed frying pan.  Once the edges are bubbling, lay the chicken breasts in.  Cook until golden brown on both sides.



Remove from the pan and slice into roughly 1/2" sections. Do not worry if the centre is still raw, as the chicken will cook in the soup.



Step 3: Miso

Add Miso Paste to a measuring jug and add 1 pint of boiling water to create broth.  Add dried Miso Soup "block"



Step 4: Veg!

Add another small knob of butter to the pan, and throw in the mushrooms.  Toss them to get an even coating of butter and add the green beans.  Cook both for roughly 2 mins.



Step 5: Avengers, Assemble!

Pour in the Miso Broth and add the chicken slices.  Add a teaspoon of fish sauce, 2 of light soy sauce and chilli flakes to taste.  Lastly, add the noodles and allow to simmer for a few minutes until the chicken is cooked through.  Green beans should still be al dente and noodles not falling apart!



Season with toasted sesame seeds and spring onion, and serve.

Some years ago, I worked for a well-known photography retailer.  As an avid photographer, this seemed a dream.  But the mixture of low-pay and having tasty gear waved in front of your face all day long took its toll.  I left and stopped taking photos as I felt my kit was not able to replicate the image I saw in my head. I have since realised this is not true at all, having enjoyed using a few different iterations of the iPhone to take photos. But 2 years ago, now in a position to do so, I bought myself a Canon 70D.  I use a mixture of lenses:  Canon 50mm f/1.8  Canon 24mm f/2.8 Sigma 10-20mm f/3.5 Canon 70D with Sigma 10-20mm f/3.5 The big advances have been in the way the photographer can edit and share their photos. Photo Journal Pt.I

As we're halfway through the year (roughly), now felt a good time to share a few images I have created this year.  unfortunately, I am a perfectionist, so I may shoot 100 photos and come out with one that "feels" right to me.  Thank God for massive memory cards!  All images shot on my Canon 70D using either the 24mm f2.8 Pancake Lens or Sigma 10-20mm f/3.5 Wide-Angle Lens.
